Gluten free pancake mix recipe

Ingredients

Ingredients to make 2 ½ lbs of mix

  • 9 cups All- purpose gluten free flour mix
  • 1 cup Sugar
  • 3 Tbsp Baking powder
  • 2 tsp Salt

Ingredients for 8 -10 Pancakes

  • 1 cup Pancake mix
  • 1 cup Dairy free milk
  • 1 large Egg
  • 2 Tbsp Extra Virgin Olive Oil, Canola or Vegetable oil
  • 4 Tbsp PB Fit Optional, for extra protein

Instructions

Pancake Mix Directions

  • In a large bowl, add all ingredients and mix. Store in an air-tight container.

Pancake Directions

  • Preheat a pan with EVOO over medium heat
  • Add 1 Tbsp of pancake batter.
  • Carefully flip the pancake when batter begins to bubble, about 3 minutes
  • Allow to cook for 2-3 more minutes or until golden brown
  • Serve immediately or freeze
