Gluten free, dairy free Taco bake
We had a hard time finding a store-bought taco seasoning mix without ingredients we couldn’t pronounce, so we came up with our own recipe! This can be eaten as a meal by itself, spooned into taco shells, or served as a party dip with taco chips.
1 small onion, finely chopped
1 lb ground beef
1 TBSP olive oil
1/4 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1 tsp paprika
2 tsp cumin
1/2 tsp fish sauce
1/4 c ketchup
1/2 c water
Hot sauce, if desired, to taste
White rice (serving for 4)
Salsa, 16 oz jar (hot, med or mild, depending on taste)
1 package Daiya cheddar dairy free cheese
Preheat oven to 375 degrees. Spray an 8×8 pan with Spectrum non-stick spray, set aside.
In a large fry pan, add oil and onion; cook over medium heat until translucent
Add ground beef and cook until browned
Remove from heat and drain excess fat
Stir in salt, pepper, garlic powder, cumin, fish sauce, ketchup and water (hot sauce, if desired);
Simmer about 10 minutes, or until mixture thickens
Cook white rice (serving for 4) according to directions.
Mix cooked rice with salsa, set aside.
Spread refried beans in the bottom of a 8×8 pan
Layer beans over the rice mixture
Layer the rice with ground beef mixture
Top with Daiya cheddar cheese
Bake in the oven for about 20 minutes, or until ‘cheese’ is melted on top, and mix is warmed through.
Serve with gluten free taco chips, taco shells, or just eat as is!
