Make these easy, festive gluten and dairy free reindeer cupcakes for the holidays. When we started cooking gluten and dairy free, one of the things I missed was sending my daughter to parties with cute, Pinterest-worthy treats.
This recipe fits the bill.
Ingredients – Cupcakes
1/2 cup all-purpose, gluten free flour
1/2 cup gluten free cocoa powder
1/2 tsp sea salt
1 tsp baking soda
3 eggs ( or egg replacement)
1/2 cup canola oil
1 c agave nectar
Directions – Cupcakes
Preheat oven to 375 degrees.
In a medium bowl combine flour, cocoa powder, salt and baking soda.
In a large bowl, blend together eggs, oil and agave.
Blend dry ingredients into wet, completely.
Line a 12-cup cupcake tin with paper liners, and scoop 1/4 c into each.
Bake at 375 for 20-22 minutes.
Let cool completely before frosting.
Ingredients – Chocolate Frosting
1 cup butter substitute (like Earth Balance) at room temperature
4 cups powdered sugar
½ cup unsweetened cocoa powder
1 tsp vanilla extract
3 TBSP milk substitute
Directions – Chocolate Frosting
In a medium bowl combine butter substitute, powdered sugar, cocoa powder and vanilla. Add in milk substitute 1 TBSP at a time until desired consistency.
Ingredients – Decorations
Gluten free pretzels (2 for each cupcake)
Enjoy Life mini chocolate chips (eyes)
Enjoy Life mini cookies (vanilla honey graham)
Red M&Ms or Sunspire sun drops (this can be substituted with a dairy-free red gummie or gum drop like DOTS candy)
Directions – Decorations
Frost cooled cupcakes with chocolate frosting. Add gluten free pretzels for antlers. Mini chocolate chips for the eyes. Mini cookies for the face, and use frosting to stick the red M&M on the cookie for the nose.
This recipe is so much fun to make! When I’m pressed for time, I’ve used a gluten free boxed cake mix to make this recipe even easier. When your child shares these gluten dairy free reindeer cupcakes – no one will guess that these aren’t made with wheat flour and milk.
